Einkorn is an ancient grain that is thought to be the first wheat grain ever cultivated! While einkorn does contain gluten and is not suitable for those with a gluten allergy, some people have an easier time digesting gluten from einkorn. It is denser than our other breads due to the low gluten content but makes up for that with flavor and whole grain nutrition! We source our einkorn from a local New Jersey mill and farm.
This loaf has 50% einkorn and 50% bread flour. This 50/50 blend makes this loaf fluffier than our 100% Einkorn.
